Kula | Ulupalakua
Found in the upcontry region of Maui, Kula is a quaint, rustic area on the slopes of Haleakala. Located in the central part of the island, Kula is also at the center of its culinary resurgence, with much of the exotic produce served at Maui’s best Hawaii Regional Cuisine restaurants grown right here in the rich, volcanic soil. The fertile fields of Kula are an ideal place to stir up your appetite by taking a farm tour. Pick a Maui onion at O'o Farm, smell the sweet lavender and marvel at the stunning views at the Ali'i Kula Lavender Farm or see the protea at the Shim Coffee and Protea Farm Tour, or check out the Surfing Goat Dairy or the Organic Ocean Vodka Farm. The region is also home to the Kula Botanical Gardens, filled with blooming carnations, birds of paradise and orchids.

Pukalani
Pukalani, which means “heavenly gate” or “window to heaven” in Hawaiian, is the largest town in upcountry Maui. Situated on the slopes of Mt. Haleakala at an elevation of 1,526 feet (465 m), Pukalani’s temperature is cooler than the temperature in towns located at or near sea level. While the place evokes a laid-back, country atmosphere, it has a commercial center that includes coffee shops and restaurants, including a Starbucks and Pizza Hut. Pukalani also has community and recreation centers, an 18-hole golf club and sports fields.

Makawao | Olinda
Makawao a once rough and tumble cowboy town is now a lively community of entrepreneurs that mix with a: general store, an old fashioned barber shop, a health food store, fine art galleries, restaurants, and a collection of boutiques unrivaled throughout the islands. Old timers and new-age types live side by side in upcountry harmony. Art, clothing, and gifts designed to delight every taste now decorate windows that once held homegrown produce and jars filled with “3 for a penny” candies.
In Olinda, you’ll get the feeling of being on top of the world, while remaining just minutes away from the conveniences of civilization. Slightly cooler than Makawao, Olinda sits at 3000 to 4,000 feet above sea-level. It is a refreshing change from the intense heat of many of the beach-side resort towns down at sea-level.
